In honor of Rosh Hashana, the Jewish New Year, which starts tonight at sunset. I wanted to share with you a new recipe that I am loving! It is a recipe for Honey Cookies. Here is the link for the original recipe from Lil’ Miss Cakes.
- ⅔ cup oil
- 3/4 – 1 cup sugar (depending on desired level of sweetness)
- ¼ cup honey
- 1 egg
- 1 tsp. vanilla extract
- 2 cups flour
- 2 tsp. baking soda
- ½ tsp. salt
- turbinado sugar, for rolling
Instructions
Place the oil and sugar in a mixer, combine well. Add the honey to the bowl and mix. I suggest using the same measuring cup for the oil and the honey as the oil residue will help the honey to come out of the measuring cup. Mix until well combined. Add the egg and vanilla. Mix until smooth. Add the flour, baking soda and salt. Mix until a soft dough forms.
Cover a cookie sheet with parchment paper. Using a scoop measure, place one scoop at a time into a bowl of the turbinado sugar and roll until the dough is fully coated in the sugar. Place the cookies onto the prepared cookie sheet around one to two inches apart. Place in the oven and bake for 9 minutes.
