I found a fantastic overnight oats recipe on Eating Well, here. I have been using and adapting it with great success for about a year now. For a few months in the middle I lost the recipe and was very sad that I couldn’t make it. I wanted to share it here with you guys.
Eating Well has many varieties but all of them seem to use the same formula. They even have a breakdown of the formula here. It is the best overnight oats system. It is easy and quick to make and results in a creamy, delicious, healthy, and filling breakfast.
First I will share a summary of the formula, and I will post the specific recipe another day.
Overnight Oats for One
Begin the night before
- 1/2 cup Oats (rolled or old fashioned, NOT quick)
- 1/2 cup Liquid (water, milk, nondairy milk)
- pinch of salt
Combine the ingredients and place in a covered container overnight.
Toppings
Toppings can vary widely. I like to add a few types and vary the specifics. All of these are optional and I have had lots of luck doing any number of combinations.
- Sweet (I generally use maple syrup but honey is also very nice)
- Creamy (yogurt)
- Spices (cinnamon, etc.)
- Fruit (bananas, berries, apple, mango, kiwi)
- Dried fruit (raisins, craisins, dates, cherries)
- Crunchy (nuts, granola, coconut)
I like to use to use these parfait cups, easily available at Amazon. It allows me to place the overnight portion in the bottom, and have my toppings in the insert. That way I can prep it all the night before. The next morning I grab the cup and head out. At work, I invert the insert and mix the toppings in. This allows the toppings to stay fresh and keeps the flavors from getting muddled, while keeping all prep to the night before.
