Another great find while looking for inspiration for Mediterranean diet friendly recipes was this one. Again, I adapted it a bit.
This recipe is more of a guide to construct a yummy, healthy sandwich based on goat cheese and yummy vegetables. I would just use whatever vegetables you have on hand. Have fun with it! There are so many combinations that would work.
The main thing about this version is the goat cheese for flavor, avocado for creaminess, and the cucumber for crunch. The combination is super delicious!!
Avocado, cucumber, and goat cheese sandwich

Makes two sandwiches
Ingredients
- 2 slices of Multigrain bread
- 1/2 ripe avocado
- 1/2 oz goat cheese
- 1 cucumber
- 2 slices of tomato
Toast the bread. Slice the vegetables thinly. Then spread the goat cheese on the bread and construct the sandwich. Enjoy!!
