Overnight Blueberry French Toast

This past Sunday was Mother’s Day. So N and I threw a surprise Mother’s Day brunch for my mother. My sister and her family also live near us so they joined us. It was a beautiful   family get together and my mother seemed to love it. So we were very happy with how it went.

We served a variety of purchased food such as bagels, cream cheese, lox, tuna, and eggs. But the centerpiece was an overnight French toast that I made. I got the recipe from Chef in Training, here. She also has other fabulous looking overnight French toast recipes that I look forward to trying.

I made a few changes, and wanted to share the result with you guys as it came out super delicious! It was also fairly easy and fun to make. I would definitely recommend it for your next brunch.

Overnight Blueberry French Toast

Ingredients
  • 12 slices bread, cut into cubes
  • 1 (8-ounce) package cream cheese, cut in cubes (I got whipped by mistake, I think it would come out better with regular)
  • 1 cup blueberries (fresh or frozen, I used frozen and they worked great)
  • 12 large eggs
  • ⅓ cup maple syrup
  • 2 cups milk
  • 1 teaspoon vanilla

Start by greasing a 9×13 pan. Toast the bread, just a light toast to firm the bread up a bit. Then cut the bread and cream cheese into cubes.

Place 1/2 of the bread into the pan, place the cream cheese and blueberries on top. Try to make sure there is nice coverage over the bread. Then top with the remaining bread.

Whisk together the eggs, maple syrup, milk and vanilla. After thoroughly combined, pour  into the pan over the bread. Press down lightly with a spatula to ensure all of the bread receives a nice coating of the egg mixture. Cover and place in the fridge overnight.

Preheat the oven to 350 degrees. Place the pan in the oven covered, for 30 minutes. Uncover the pan and cook for another 30 minutes until the French toast becomes a beautiful golden brown and puffs up nicely. Take out of the oven and serve. Enjoy!
