N and I are big fans of the television show Psych. We were very sad when the show ended a few years ago. So when they made a TV movie, Psych the Movie, and it came out a few weeks ago we were super excited. Sadly we were unable to watch it when it first aired, however we were able to record it to watch later. Last night, we were finally able to watch it!
Now, there are a few things foodwise that are strongly tied to Psych. Pineapples of course, since they appear in every episode of the show. But for movie snacks we had only one choice. Many foods are mentioned and enjoyed on the show but none more so than Fries Quatro Quesos Dos Fritos, which are potatoes that stuffed with a 4 cheese mixture, twice fried and served on a generous mound of ancho chile sour cream and bacon bits.

So of course, we had to make these delicious morsels to enjoy with the movie! The only question was what recipe (there are so many versions out there) to make.
N recently introduced me to a fabulous YouTube channel, Binging with Babish, a show where foods shown and discussed in television and film are recreated. Of course, he has his own version of Fries Quatro Quesos Dos Fritos, and this was the one we chose to make.
The recipe was easy to follow and came out amazingly well!
We made two adjustments. One is that, as Babish recommends in his video, we used the four cheese mixture from his first version, in the potato shell of the second version, instead of the cubes of cheese. The second, is that we used Baco bits (fake bacon) since real bacon is not Kosher. The end result was fantastic and it was the perfect accompaniment to the fabulous and super fun Psych: The Movie.
