Sunday night, N and I made the second meal for week two from Kitchn Synch, Balsamic Chicken with Grilled Corn and Swiss Chard.
We started out with our protein:
2 Chicken Breasts
And our oil:
EVOO
We opened up the Odds and Ends package to find:
1 bag Swiss Chard
1 bag Corn
1 container Ketchup
1 container Balsamic Vinegar
1 container Margarine
1 bag Salt
1 bag Pepper
We were very happily surprised that all of the ingredients were still fresh even after a week in the fridge!

The meal didn’t require any fancy techniques and was a one pot meal.
Ease of Cooking: A
This recipe was quick and easy. It took around 20 minutes.

This recipe was ok. I personally love balsamic vinegar so I was very excited about this meal, N is not as big a fan of balsamic on chicken. He was sadly proven right with recipe. The strong and rich balsamic taste didn’t really come through, it just burned on the chicken so the taste wasn’t great, even though the chicken was still moist. The Swiss chard and corn however, was great!

Both N and I were full after this meal.

The meal looked almost exactly like the recipe.

There were no specialty ingredients so we could easily make this again. The Swiss chard and corn was quick and super tasty so we will definitely do that again but the chicken was not worth repeating.
