Last night N and I made the second meal from Kitchn Synch, Chicken Panzanella.
We started out with our protein:
2 Chicken breasts, skin on
And our oils:
Canola and EVOO
We opened up the Odds and Ends package to find:
1 Lemon
1 Baguette
1 bag Spring Mix
1 Onion
1 container Cherry Tomatoes
1 container White Vinegar
1 bag Sugar
1 bag Kosher salt
1 bag Ground black pepper
Overall the ingredients were in good condition, as with the first meal the greens were a bit wilted but still good. The ingredients are easy to buy again and other than the greens were very fresh.
Ingredient Freshness: B
The meal didn’t require any fancy techniques, the prep was quick and easy, and it only took one pot!
Ease of Cooking: A
It was a very quick recipe taking approximately 20 minutes.
Speed of Cooking: A
While the recipe was not complicated and no confusing words or techniques were used, there were a few confusing things. In one step the picture clearly showed salt and pepper on the chicken but it was not listed in the instructions. In another step it said to cook the tomatoes in EVOO, add the sugar and EVOO and then toss the listed ingredients in EVOO. We were not sure if we were supposed to add EVOO three separate times, or if it was added one extra time by mistake, since the first time was for oiling the pan and the last was for dressing the salad but we had no idea what the middle one was for. In the end, to avoid too much oil as best we could, we scooped the tomatoes out of the oil they were cooked in and then added the oil and sugar, and then combined the salad ingredients and the assumed dressing. If it had been listed separately as a dressing or if it was separated out we would have had no confusion. Also there was no guide on how much salt and pepper to use so we used our best judgment.
Recipe Instruction: B-
This recipe was extremely tasty. We both loved it! The chicken had a bit of crispness from the skin and was very moist. The salad dressing and pickled onion added acidity and sourness, the tomatoes added sweetness, the spring mix added earthiness and the toasted croutons added a great crunch.
Taste: A+
Both N and I were full after this meal which surprised us. There was a little extra salad that I ended up finishing because I didn’t want to waste any of the yumminess.
Filling: A
The chicken looked spot on, but the salad aspect was off in the ratio of greens to everything else.
Looks like the Recipe: A-
There were no specialty ingredients so we could easily make this again and considering how good and easy it was, we definitely will.
Remake ability: A
Overall we were very satisfied with this meal!
Overall Grade: A
Note: This recipe used up almost all of the EVOO, hopefully there will be enough for the last recipe…
